King Henry, Seared

I figured House of Prime Rib wouldn’t be too busy yesterday being Mother’s Day. I was right. Came around 6pm and got immediately seated. Saturday I did 17K steps and Sunday another 16K in addition to 30 minutes of lap swimming, so I was ready to eat a big meal guilty free.

Decided to try something new, seared. When you order the King Henry cut you can request to get it seared. The bartender warned me that due to the nature of searing they can’t guarantee my medium-rare order would be medium rare. I didn’t make much of it, probably more a CYA thing. So went with King Henry, medium-rare, seared, with mash and cream of spinach for the sides. Side of extra au jus.

Oh my god, when it came out it smelled soooo good. I haven’t had a proper charred, seared steak in a while, and this reminded me how great seared steaks smell. I seriously couldn’t get over how amazing it smelled. Now it’s not the same as a traditional steak like a Ribeye. It’s still a prime rib, so it’s softer and more tender. In a way it’s getting the best of the a traditional steak, the sear, with the tenderness of the slow cooked prime rib. This might be my new go-to order at House of Prime Rib.
